The Weekend In Paris was part of the press corps covering the breaking news that the Fairmont Monte Carlo has hired its first female pastry chef! Claire Verneil, formerly a lawyer, had a desire to follow her passions and begin a new career as a pastry chef. She adds a “female touch” to the staff of Executive Chef Phillipe Joannés. General Manager Xavier Rugeroni greeted members of the Monte Carlo and Nice media introducing Ms. Verneil as a welcome addition to the Fairmont Monte Carlo catering staff.
Chef Verneil’s love of creating innovative and feminine pastries came from cooking with her grandmother. She incorporates her contemporary style with classic French pastry training resulting in delicious and beautiful desserts of distinction. Each individual pastry is both pleasing to the palette and the eye. Works of art, her petit replicas of Tiffany boxes and chic handbags, stand out in a world of male dominated designs.
A true “chef of the world” Chef Verneil draws from her experiences of living abroad and incorporates all of those influences into her cuisine. Along with classic French pastries, the press previewed American style brownies and beignets.
